Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 2 cups cooked jasmine rice
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • ½ cup parsley, chopped
  • 2 tablespoons tahini
  • Juice of 1 lemon
  • Olive oil and spices (cumin, coriander, paprika, turmeric)

Instructions

  1. Marinate chicken thighs with olive oil and spices for at least 30 minutes.
  2. Cook the marinated chicken in a grill or skillet over medium-high heat for about 6–7 minutes per side until fully cooked.
  3. Allow jasmine rice to cool completely before combining with diced vegetables (cucumber, tomatoes, onion, parsley).
  4. Whisk together lemon juice and tahini to create the dressing.
  5. Combine cooled rice with vegetables and sliced chicken; drizzle with dressing.
  6. Toss gently and garnish with toasted almonds before serving.
