- 3.4 oz instant lemon pudding mix
- 2 (8 oz) packages cream cheese
- ¾ cup frozen lemonade concentrate
- 1 ½ cups fresh blueberries
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C) and prepare an 8×8 baking dish with non-stick spray.
- To make the crust, mix together brown sugar, flour, chopped pecans, and melted butter until combined. Press firmly into the bottom of the baking dish and bake for about 15 minutes until golden. Let cool completely.
- For the filling, whisk evaporated milk with instant lemon pudding mix until thickened. In another bowl, beat cream cheese until fluffy and gradually add frozen lemonade concentrate. Fold in pudding mixture gently and spread over cooled crust.
