- 2 large onions, thinly sliced
- 4 cups beef broth
- 1 cup dry red wine
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons Worcestershire sauce
- 1 bay leaf
- 4 slices French bread, toasted
- 1 cup Gruyère cheese, shredded
Instructions
- Sear the short ribs in olive oil over medium-high heat until browned on all sides. Remove and set aside.
- In the same pot, caramelize the sliced onions over medium heat for about 20–25 minutes until golden brown. Add minced garlic and thyme; cook for an additional minute.
- Deglaze with dry red wine, scraping the browned bits from the bottom of the pot.
- Return short ribs to the pot along with beef broth, Worcestershire sauce, and bay leaf. Bring to a boil, then reduce heat to simmer for 2–3 hours.
- Shred the meat from bones after cooking; discard bones and return shredded beef to the soup.
- Ladle soup into bowls, top with toasted French bread and shredded Gruyère cheese. Broil until cheese is bubbly and golden brown.
