  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup dry red wine
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 4 slices French bread, toasted
  • 1 cup Gruyère cheese, shredded

Instructions

  1. Sear the short ribs in olive oil over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, caramelize the sliced onions over medium heat for about 20–25 minutes until golden brown. Add minced garlic and thyme; cook for an additional minute.
  3. Deglaze with dry red wine, scraping the browned bits from the bottom of the pot.
  4. Return short ribs to the pot along with beef broth, Worcestershire sauce, and bay leaf. Bring to a boil, then reduce heat to simmer for 2–3 hours.
  5. Shred the meat from bones after cooking; discard bones and return shredded beef to the soup.
  6. Ladle soup into bowls, top with toasted French bread and shredded Gruyère cheese. Broil until cheese is bubbly and golden brown.
