Description

  • 4 large russet potatoes
  • Salt and pepper to taste
  • 1 cup sour cream
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • ⅓ cup cooked bacon, crumbled
  • ¼ cup chives, finely chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub and poke holes in the potatoes.
  2. Bake potatoes on the oven rack for 45-60 minutes until tender.
  3. Cool slightly, cut in half lengthwise, and scoop out the insides into a mixing bowl.
  4. Mix the scooped potato flesh with sour cream, milk, butter, cheese, bacon, chives, salt, and pepper until smooth.
  5. Refill potato skins with the mixture and bake for another 15-20 minutes until golden brown on top.
  6. Serve hot with optional extra toppings.
