  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, minced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 3 medium Russet potatoes, peeled and thinly sliced into 1/4-inch rounds
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 cup sour cream, for serving
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 375°F and grease a 9×13 inch baking dish.
  2. In a skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned (5-7 minutes), draining excess fat.
  3. Stir in minced onion and cook until softened (3-4 minutes). Add garlic and cook for 1 minute.
  4. Add seasonings (salt, black pepper, paprika, thyme) and cook for 1 minute. Mix in tomato paste and beef broth; simmer for 5 minutes to thicken.
  5. Layer half of the potato slices in the baking dish, spoon over the beef mixture, then top with remaining potatoes.
  6. Sprinkle cheese over the top layer of potatoes.
  7. Bake for 30-35 minutes until potatoes are tender and cheese is bubbly and golden.
  8. Let stand for 5 minutes before serving with sour cream and parsley.
