- 2 tablespoons unsalted butter
- 1 medium yellow onion, chopped
- 2 medium carrots, peeled and 1/2-inch diced

- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 3 large Russet potatoes, peeled and 1/2-inch diced
- 2 cups cooked chicken breast, cubed
- 1 cup heavy cream

Instructions
- In a large stockpot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon, place on a paper towel-lined plate, and crumble once cooled. Drain off all but 2 tablespoons of bacon fat from the pot.
- Add the butter to the pot with the remaining bacon fat. Once melted, add the chopped onion and diced carrots. Cook over medium heat for 5-7 minutes, or until the vegetables have softened.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
