- 1/4 cup olive oil

- 1/2 teaspoon black pepper
- 1 cup fresh cranberries, divided
- 1/2 cup maple syrup
- 1/4 cup orange juice
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 375°F. Remove giblets and neck from the chicken, then pat dry with paper towels.
- In a bowl, whisk together 1/4 cup maple syrup, orange juice, and chopped rosemary.
- Rub the chicken with olive oil and season generously with salt and pepper. Place in a roasting pan.
- Roast for 30 minutes, then brush with the maple-orange glaze.
- Continue roasting, basting every 15-20 minutes until the internal temperature reaches 165°F (about 1 to 1.5 hours).
- During the last 20 minutes, add 3/4 cup cranberries around the chicken.
- Once done, transfer to a platter lined with lettuce leaves and spoon remaining pan juices over the chicken. Let rest for 10 minutes before carving.
