Instructions

  1. Preheat your oven to 375°F and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugar until fluffy (2–3 minutes).
  4. Beat in pumpkin puree, egg, and vanilla extract until smooth.
  5. Gradually combine dry ingredients with wet ingredients on low speed until just mixed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets (2 inches apart).
  7. Bake for 10–12 minutes until edges are golden and centers spring back when pressed.
  8. Cool on baking sheets for 5 minutes before transferring to wire racks.
  9. For frosting: beat cream cheese and butter until creamy (2–3 minutes), then add sifted powdered sugar gradually. Mix in vanilla and salt before beating until fluffy (about 2 minutes).
