  • 2 cloves garlic, minced
  • 1 1/2 cups uncooked orzo pasta
  • 3 cups chicken broth, divided
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked chicken, shredded
  • 1 1/2 cups shredded Gruyere cheese, divided
  • 1 cup crispy fried onions, divided
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F and grease a 9×13 inch baking dish.
  2. Boil 2 cups of chicken broth in a large pot, add orzo, simmer for 8-10 minutes until al dente, then drain.
  3. In a skillet, melt butter over medium heat. Add sliced onions; cook for 15-20 minutes until caramelized. Stir in minced garlic for 1 minute.
  4. Sprinkle flour over the onion mixture; cook for 1 minute. Gradually whisk in remaining chicken broth and heavy cream; simmer until thickened.
  5. Season with thyme, salt, and pepper. Remove from heat.
  6. Stir in cooked orzo, shredded chicken, 1 cup Gruyere cheese, and ½ cup crispy fried onions until combined.
  7. Transfer to the baking dish; top with remaining Gruyere cheese and crispy onions.
  8. Bake for 20-25 minutes until bubbly and golden brown on top.
  9. Let stand for 5 minutes before serving; garnish with chopped parsley.
