  • 2 pounds beef stew meat
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 ounces)
  • 3 large carrots
  • 2 pounds russet potatoes
  • Fresh parsley for garnish

Instructions

  1. Dry the beef cubes with paper towels, season with salt and pepper, then toss in flour.
  2. In a Dutch oven, heat oil over medium-high heat; brown the beef in batches. Remove and set aside.
  3. Sauté onions until soft, add garlic and cook until fragrant.
  4. Deglaze the pot with 1 cup of beef broth; return beef to the pot along with remaining broth, tomatoes, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  5. Bring to a simmer, cover, and cook on low for 90 minutes until beef is tender.
  6. Add carrots and potatoes; cook covered for another 20-30 minutes until vegetables are fork-tender.
  7. Discard bay leaf before serving and garnish with parsley.
