- 2 pounds beef stew meat
- 1/4 cup all-purpose flour
- 2 tablespoons vegetable oil
- 1 large yellow onion
- 4 cloves garlic
- 4 cups beef broth
- 1 can diced tomatoes (14.5 ounces)
- 3 large carrots
- 2 pounds russet potatoes
- Fresh parsley for garnish

- Discard bay leaf before serving and garnish with parsley.
