Ingredients
- 2 pounds beef chuck, cut into 1.5-inch pieces
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 1.5 pounds Yukon gold potatoes, peeled and cut into 1.5-inch pieces
- 1 pound carrots, peeled and cut into 1-inch pieces
- Fresh parsley, for garnish
Instructions
- In a bowl, toss beef with flour, salt, and pepper until coated.
- Set Instant Pot to 'Sauté'; add oil and sear half the beef for 3-4 minutes per side until browned. Remove and repeat with remaining beef.
- Sauté onion in the pot for about 4 minutes; add garlic and cook for another minute.
- Pour in beef broth and deglaze the pot; add Worcestershire sauce, tomato paste, thyme, and bay leaf.
- Return seared beef to the pot; layer potatoes and carrots on top without stirring.
- Secure lid, set vent to 'Sealing', and pressure cook on high for 35 minutes.
- After cooking, let pressure release naturally for 10 minutes; then quick-release any remaining pressure.
- Remove lid, discard bay leaf, stir stew to combine ingredients and thicken sauce.
- Serve hot in bowls garnished with fresh parsley.
