  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 3 cups pecan halves

Instructions

  1. Preheat your oven to 350°F. Line a 9×13 inch baking pan with parchment paper.
  2. For the crust: Cream together softened unsalted butter and granulated sugar until fluffy. Gradually mix in all-purpose flour until a soft dough forms. Press this dough into the bottom of the prepared pan.
  3. Bake the crust for 18-20 minutes until lightly golden, then set aside. Lower the oven temperature to 325°F.
  4. For the topping: Melt unsalted butter in a saucepan over medium heat. Stir in light brown sugar and light corn syrup, bringing it to a boil while stirring constantly. Reduce heat and simmer for 5 minutes before removing from heat and adding vanilla extract.
  5. Stir in pecan halves until coated with caramel mixture, then pour evenly over the warm crust.
  6. Return to the oven and bake for another 20-25 minutes until bubbly and lightly toasted.
  7. Allow to cool completely before cutting into 24 bars.
