- 2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter
- 1 cup packed light brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 3 cups pecan halves
Instructions
- Preheat your oven to 350°F. Line a 9×13 inch baking pan with parchment paper.
- For the crust: Cream together softened unsalted butter and granulated sugar until fluffy. Gradually mix in all-purpose flour until a soft dough forms. Press this dough into the bottom of the prepared pan.
- Bake the crust for 18-20 minutes until lightly golden, then set aside. Lower the oven temperature to 325°F.
- For the topping: Melt unsalted butter in a saucepan over medium heat. Stir in light brown sugar and light corn syrup, bringing it to a boil while stirring constantly. Reduce heat and simmer for 5 minutes before removing from heat and adding vanilla extract.
- Stir in pecan halves until coated with caramel mixture, then pour evenly over the warm crust.
- Return to the oven and bake for another 20-25 minutes until bubbly and lightly toasted.
- Allow to cool completely before cutting into 24 bars.
