  • ½ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • 4 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons shelled pumpkin seeds (pepitas)
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, cream softened butter and sugars until fluffy. Add the egg and vanilla; mix well.
  4. Stir in pumpkin puree until combined.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined.
  6. Drop rounded tablespoons of dough onto prepared sheets; space them about two inches apart.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Cool on baking sheets for five minutes before transferring to a wire rack.
  9. For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla until fluffy.
  10. Once cookies are cool, frost generously and garnish with pumpkin seeds and cinnamon.
